The Savage Eye RT2, 10.25pm This week, David McSavage looks at the reasons why the Irish are so happy to be unhappy. Now 44, the Oxford-educated gourmet has become a culinary treasure. His new book, River Cottage Every Day, is out now Interview by Chloe Scott Not all pigs will be direct descendents of Delia, but others will have bred from her progeny. Her DNA is alive and well When you worked at River Caf, I heard you were quite clumsy. Did you have accidents? I probably have more accidents cooking on camera. Two years ago, I cut my longest finger on my left hand while slicing chorizo for a spicy fish stew in a trawler at Brixham. There is about three minutes of me swearing badly. At dinner parties, do you find you want to interfere with peoples cooking? Not just wanting to, I do. Im a terrible interferer. I should probably go to Interferers Anonymous. I must try to deal with it because in other peoples kitchens I just hover and they find it very stressful. At home, it irritates my wife. But weve recently worked out a good thing. She makes a lot of bread, the most fantastic sourdough and pizzas and stuff, which I dont get involved with. Thats been great progress, but I still cant help unleashing my interfering at friends. How is Delia? Oh goodness me, Delia the pig was a long time ago. Delia had several successful litters and was retired and went the way of most retired sows and became sausage and salamis and other deli items. Not all the pigs will be direct descendents of Delia, but others will have bred from her progeny. Her DNA is alive and well in west Dorset and east Devon. Are you ever tempted to call any bulls Jamie or Gordon? No, I never felt the need to use those particular names. Whats happening with the chicken campaign with Tesco? Tesco is selling more high welfare chicken than it used to and thats partly because of our campaign. They decided their Willow Farm chickens should become RSPCA chicken, which was good. What Im most pleased about is high welfare chicken has stood well against the recession. hungry now. Im fishing at the moment. Theres a chilly breeze over the sea and I could really do with some piping hot crispy pigs ears with mustard mayonnaise. That would make me very happy. All I have are oatcakes, its very austere. I could take a fillet of sushi off this mackerel. What is your guilty pleasure? I dont know about guilty, but I love Crunchies. I recently rediscovered the Double Decker. Do you ever diet? I dont really worry about it, not formal dieting. Tell us something we dont know about you. I am a little accident-prone in cars. I took my childrens headmasters lights out the other day reversing out of the school. It was embarrassing. He was very relaxed about it, Im delighted to say. Are cows aggressive? Ive watched a vet be hoisted by one of my cows when she was probing its feet. I think she touched a tender spot and, er, if it had horns, it would have been a goring. Organic has had a little knock. But high welfare has gone from six or seven per cent of the market to 15 to 16 per cent in two years. But it would be naive of me to claim that as any outright victory when 80 per cent consumed is still intensively farmed. Have you ever thought about becoming vegetarian? My conscience continues to be engaged so, in that sense, Im closer to being a vegetarian than other carnivores, but it doesnt mean I will become one. Do you still eat roadkill? Ive been branded as the roadkill chef. But if you look at River Cottage and A Cook On The Wild Side, I havent actually eaten a single bit of roadkill in either programme. Im not saying Ive never eaten it. So, which do you prefer, bunny burger or crispy pigs ear? Tricky one, at a pinch Id go for the crispy pigs ear.
