But he also knows his onions about art. He chairs a Barrys Tea talk tonight at the Metro Bosco Theatre as part of the Absolut Fringe Interview by Lucy White When a man has the cheek to charge, say 40 for a bowl of soup, he cannot be trusted in the kitchen or anywhere else Why are you chairing a talk on art? Is it an interest of yours? Of course. I cant imagine not liking art. Why? Life is confusing, exciting, sometimes depressing. Art enables us to make sense of life. What sort of moron says, I dont like art? What, in your opinion, makes art art? Theres an English literary critic called John Carey who wrote a brilliant book called What Good Are The Arts? I cant improve upon his definition: a work of art is anything that anyone has ever described as a work of art. Who is your favourite artist or work? My favourite artist is Graham Knuttel but hes a friend, so I guess that doesnt count. Graham is the most generous man in Dublin, and one of the most wicked. He has consistently supported me for the last 18 years, and theres nothing I wouldnt do for him. So, yes, hes my favourite artist. My favourite work of art? Thats tricky. Theres a small painting by Louis Le Brocquy called A Picnic thats on view at Imma until September 27. You probably know it to see, but it is, I promise, a lot better in the flesh. Dont miss this chance to see one of the truly great works of modern Irish art. Why did you return to Ireland from your travels in New York, Bermuda, Prague and Cape Town in 1997? I was stupid enough to think that Dublin might be ready for an intelligent magazine. Weirdly, it seems I was right. After nine years, The Dubliner continues to entertain, shock, delight and enlighten in equal measure. The editor, Nicola Reddy, is doing a brilliant job, and while I dont own the title anymore, Im enormously proud of her for what shes achieved. You must have eaten in some considerably snooty restaurants when you were senior editor of Americas Elite 1,000. Which one was the fanciest or most pretentious? I love the Four Seasons in the Elephant & Castle. After that, I guess anything by Susan Jane Murray. Her website [susanjane murray.com] is full of incredibly good recipes for people who have food allergies or people who are just plain fussy. Nothing wrong with that. In fact, the real enemy is people who arent fussy. Its because of them that McDonalds continues to prosper. Is the success of The Dubliner based on your restaurant guide, and thus the capitals love of dining? The Dubliner 100 Best Restaurants is popular, but without the hugely talented team that puts it together, neither it nor the magazine would still find an audience. Having said that, yes, there is a huge appetite for information about dining out in Dublin, and thats a big factor in the success of the guide each year. You were once described as a brat with beautiful manners. Is this accurate? Apparently. I would much prefer to be handsome and rude. www.fringefest.com; www.barrystea.ie in New York (nothing to do with the excellent hotel chain of the same name). World-class people watching. Its the place where anti-fur protesters dumped a dead raccoon in Anna Wintours lap. I dont imagine she ate very much that day. For the record, the food is fine. You mention the criminal activities of some chefs in your book Kitchen Con. Whats the worst story youve ever heard about the antics and activities in a restaurant kitchen? Everyone is familiar with the image of a chef p***ing into the soup. It doesnt happen quite as often as one fears. And some of the greatest culinary crimes are committed on menus, not in kitchens. When a man has the cheek to charge, say 40 for a bowl of soup, he cannot be trusted in the kitchen or anywhere else. Whats your all-time favourite dish? Honestly? The chicken wings 14 metrolife Thursday, September 10, 2009 Dumping extreme cameraman Ed Wardle in Canadas Yukon wilderness with only basic provisions and no survival training proved an exercise in (unethical) folly last month when newspapers revealed that, while making this three-part documentary, the poor chap had to be airlifted out suffering from starvation. So you know the ending; now heres the first part of the endeavour, when he does at least have some food in his knapsack. Suffice to say, this is an emotional journey rather than a useful one. index.html2.html3.html4.html5.html6.html7.html8.html9.html10.html11.html12.html13.html14.html15.html16.html17.html18.html19.html20.html21.html22.html23.html
